Ingredients and supplies

  • 1 roll of puff pastry, savoury pie dough or brisee dough
  • 1 onion, diced
  • 2 or more garlic cloves, finely chopped
  • 3 leeks, cut into half rings
  • 200 grams of bacon
  • 4 eggs
  • 200 ml whipping cream or cooking cream
  • 100 grated cheese
  • Some butter to grease the springform pan
  • What oatmeal
  • Salt, pepper, paprika powder or all-seasoning mix

Other requirements:

  • 24 cm springform pan
  • A frying pan and a stirring spatula
  • Mixing bowl
  • A whisk

Prep-work

  • Grease the springform pan with butter and line the pan with the dough of your choice.
  • Sprinkle a layer of oatmeal on the bottom of the dough and sprinkle some salt and pepper or all-seasoning over it.
  • This oatmeal absorbs excess moisture, keeping the base crispy.

Set aside.

Preparation

Preheat the oven to 215 degrees fan-forced.

Fry the bacon in some olive oil in the frying pan, after 3 minutes add the onions and after another 3 minutes add the garlic.

After 1 minute add the leek and turn the heat down a bit. Let this simmer for about 5 minutes and then turn off and let it cool.

Place the 4 eggs in the mixing bowl and add the whipped cream and some salt, pepper, paprika powder or all-seasoning mix to taste

at. Beat this until light and fluffy in 2 minutes.

When the leek mixture has cooled down a bit, pour it onto the layer of oatmeal and spread it evenly.

Pour the egg mixture over it and sprinkle the grated cheese on top.

If desired, sprinkle with some paprika powder for color.

Place in the preheated oven and bake this savory pie for about 40 minutes until nice and brown and crispy.

Remove from the oven and enjoy this quiche lorraine warm or cooled.
