Ingredients and supplies

  • 2 tbsp baking olive oil
  • 600 ml ketchup
  • 1 onion
  • 2 cloves of garlic
  • 50 ml apple cider vinegar (or natural vinegar)
  • 2 tbsp brown caster sugar
  • 60 ml honey
  • 30 ml Worcestershire sauce
  • 1 tbsp (cooking) cognac
  • 1 tbsp mustard
  • 2 tbsp smoked paprika powder
  • 1.5 tbsp bean sprouts
  • 1 tsp black pepper
  • half tsp allspice powder

Prep-work

Finely chop the onion and garlic.

Preparation

Heat the oil in a pan over low heat and stir-fry the onions until they are translucent.
Add the garlic and stir.
Add salt, pepper, pul biber and allspice powder and stir.
Now add the ketchup and stir again.

Then add the (apple) vinegar, brown caster sugar, honey, Worcestershire sauce, (cooking) cognac, mustard and smoked paprika powder and stir everything well.

Then comes the most important part...tasting!

If you want it sweeter, add some honey.
If it's a bit more sour, add some vinegar.
Spicier than adding some pul biber.
For a bit more smoky flavor, add some smoked paprika powder.

Let everything simmer gently for 15 minutes, but keep stirring otherwise it will burn!
Let it cool down and your delicious sauce for the Pulled Pork is ready.

This sauce can be stored in a sealed jar in the refrigerator for several weeks.
